My oldest daughter is going on a camping trip with four other schools today, she is very excited, but nervous too! Here is a little camping lunch; rice and ground turkey, rice cheese tent and fire, broccoli. The cheese "logs" are from this new cheese from Heidi Ho Organics I found at Whole Foods, locally made right here in Portland, made from hazelnuts! Excited to see what the kids think of it.

Spring garden
It was Mother's Day yesterday, and we had a lovely day with handmade gifts and my son making me breakfast in bed. The sun was shining, the birds chirping, the flowers blooming in abundance.
Today, I made a "Spring Garden". Rice and quinoa medley with coconut aminos, a couple of pieces of broccoli with some mini turkey pepperonis my youngest snuck into the grocery cart while we were shopping the other day!
The lunch, and some lovely flowers my girls potted for us on our doorstep.

Fancy
This one feels all fancy and grown up to me.
Chopped kale and spinach sautéed in oil and garlic, mixed in the forbidden rice; topped with sweet potato flowers, broccoli and topped with coarse Mediterranean sea salt.

More good luck for us!
Broccoli with a once through in my Ninja, mixed with garlic salt, coconut oil and rice. I used one of my heart cookie cutters again to make the shape and formed the stem with my (always gloved!) hands. This four leave clover is resting on a bed of delicious pastrami, yum!

Christmas Tree Platter
Some new friends invited us over for a holiday party, and asked us to bring something to share. Now, I am the person who, when asked to bring something, I stop by the store and grab a bag of chips and don't even bother to put them in a nice bowl. Because I'm classy like that. Usually I'm just at a loss for things to bring and even forget things like, say, a bowl to put the chips in. Hostessing is not my forte!
Anyway, I found this idea online and went with it... I even went to the store and bought a holiday platter!
Broccoli Christmas tree, cauliflower snow, carrot and tomato ornaments! So much fun, so easy, and a hit at the party!
Later, my mom was inspired and sent me a picture of what she made for their family get together! Yay, I love being an inspiration!

Monsters in Mire
Halloween season is upon us... time for creepy food! I sautéed some garlic in oil and then blended the heck out of some leftover spinach, arugula and broccoli before it went to waste, then mixed it with cooked up mung bean noodles for the mire. These are the big all beef hot dogs from Costco (thanks to my mom!), I made little diagonal slices in the hot dog and cooked them, which led to this monstery look. Fun, super easy and the kids love it.

Flower Garden
I cut the hot dogs in pieces, then sliced them just a bit at the tops, cooked them in water until they "blossomed" and came up with hot dog tulips! Paired with broccoli, lettuce, and radish "apples" made with flax seeds. Sides of honeydew melon, apples, and poppyseed dressing.

Presents in Worms
My son named this one "Presents in Worms". I'm not really sure where I was going with this or why, just trying to do something with the gluten free spaghetti and leftover turkey ham, and using broccoli for bows. I also tried to use my mellon baller for our cantaloupe, and I wasn't having much luck with that!
